Common questions

Baker’s Percentage FAQ

Why do baker’s percentages total more than 100%?

Each ingredient is expressed relative to flour, not total dough. A 65% hydration means 650 g water for every 1,000 g flour.

What does this calculation leave out?

Flour is always the 100% base. This simple mix excludes preferments and water contained in other ingredients.
