How to calculate it

Ingredient cost = purchase price × usable quantity needed ÷ (purchase quantity × usable yield)

Use matching weight, volume or count units. No density conversion or ingredient price is guessed. Labor and overhead are entered separately.

Worked example

A 1 kg flour package costing 2 contributes 1 to a recipe using 500 g at 100% yield. A 250 g butter pack costing 4 contributes 1.60 when 100 g is used. The batch costs 2.60 before labor and overhead, or 0.325 per serving for eight servings.

Why include usable yield?

Peeling, trimming and waste reduce the amount available from a package. A 1 kg package with 80% yield provides 800 g of usable ingredient.

What does this calculation leave out?

Use matching weight, volume or count units. No density conversion or ingredient price is guessed. Labor and overhead are entered separately.
