How to calculate menu item contribution
Item contribution = price − ingredient cost; sales mix = item units ÷ category units; category average = category contribution ÷ category units
Ingredient contribution is not net profit. Category totals must include this item and use the same period. No automatic star/dog classification or popularity threshold is assumed.
